Double Chocolate Oat Bars

So I was searching for an simple and quick treat to make for my friends coming over and I picked out about 10 different recipe options. One after the other they were eliminated because somehow someway I didn’t have an ingredient in every single recipe!

After a lot of searching I finally came across Sally’s Baking Addiction Chocolate Chip Cookie Granola Bars. I made quite a few changes (because I always have to change something…it’s an addiction) and came up with these Double Chocolate Oat Bars! 

They were perfect for my guests who love chocolate! I will definitely make these again.

Double Chocolate Oat Bars
Adapted from Sally’s Baking Addiction Chocolate Chip Cookie Granola Bars 
Makes 16 bars

Ingredients

1/2 cup + 2 TB Trader Joe’s Cookie & Cocoa Swirl Spread
2 TB coconut oil
1/3 cup maple syrup
1 egg
1 tsp pure vanilla extract
3 cups old-fashioned rolled oats
2 TB cup light brown sugar, packed
pinch of salt
2/3 cup semi-sweet chocolate chips

Directions

Preheat oven to 350 degrees F. Grease a 8×8 baking pan with coconut oil or butter and set aside.

In a small bowl, melt the cookie/cocoa spread and coconut oil for 1 minute in the microwave, or until combined and melted. In a large bowl, beat the melted cookie/cocoa spread/coconut oil mixture, maple syrup, egg, and vanilla until completely combined. Add in the oats, brown sugar, and salt, mixing well. Stir in chocolate chips. It will be sticky!


Transfer to the prepared baking pan and press down, making sure the surface is flat and even. Bake 21 minutes or until set and edges look crispy. Allow to cool completely before cutting into squares.
